Making My Cupcakes

I am planning on making my own cupcakes for our September wedding. I know you can freeze cupcakes, up to about 4 days in advance. Does anyone have any experience with this? any tips? advice?

  • Freezing cupcakes is fine, just make sure you wrap them well. I'm a little confused by your 4 day statement though, not exactly sure what you mean. You can keep them frozen longer than 4 days (a month max) and they will thaw within a few hours.

    My only advice would be to brush some simple syrup along their tops before you ice them. It keeps the cake from drying out.

  • I personally wouldn't make your own cupcakes unless you don't have a very large guest list. The last thing you want to do the day before your wedding is worry about thawing and icing cupcakes.

    The last few days leading up to the wedding can be very hectic, and you'll need all the rest you can get. You really shouldn't be worrying about something as tedious and time consuming as making, freezing, thawing, and icing cupcakes.
