BBQ ideas

We are planning a pretty casual wedding.  It is going to be at a yacht club (not a really fancy place, but a nice setting, with a nice green lawn on the water and a reception hall inside).  We are going to set up a tent for the ceremony and also BBQ outside after.  We have someone who will do all the cooking, he is a trained chef but isn't a professional caterer or anything.  I haven't sat down with him yet to plan, I am still thinking of ideas.  
Right now I am wondering about meats to serve.  We were thinking maybe something like chicken skewers, like soulvaki, steaks, etc.  Any other ideas of type of meat that may be good. 
I am also thinking of different sauces, like maybe a few signature BBQ sauces or something.  
I love making things from scratch and thought it would be fun to make up some sauces.  I have a lot of time to test out recipes.  I am just looking for ideas to cover bases, like a spicy sauce,  a smokey type sauce.  Maybe a sauce for the chicken.
Any ideas or suggestions are welcome.
To emphasize, this is in the very start of planning, just kind of looking for ideas here.

    I've been to a ton of BBQ weddings, they are popular here in NC, and the BBQ sauce (if you're serving pulled pork, ribs or brisket) is always a huge mess. I'm also having a BBQ wedding and we decided to use squeeze bottles like this to try and keep the mess to a minimum. Just an idea.



    I also thought about using mason jars with large spoons in them for the sauce but that still seems really messy. I've also seen gravy boats used but it gets all over the place.

    Chicken skewers sound good. Some other options could be bbq pork sandwiches, spare ribs, beef brisket, deep-fried turkey, fried catfish, or grilled chicken. I can send you our wedding menu if you'd like, just PM me.

    that sounds SO GOOD.  ditto pp those squeeze bottles are handy, that's how our favorite bbq restaurant displays all their different sauces.  you could even DIY cute little labels if you want.

    i'm not an expert bbq'er but we grill a lot.  my fave proteins on the grill are seafood, like shrimp skewers, scallops, crab cake and catfish.

    also you didn't ask about sides but now i'm thinking about grilling - my fave sides are grilled cornbread or a sweet bread like hawaiian; grilled zucchini and mushrooms; and for dessert i HEART grilled peaches.  super sugary but soooo good with vanilla ice cream and pound cake or shortbread.

    Whole tri-tip is an awesome way to go. You slice as you go...and they won't dry out. BBQ'd sausages are good: try chicken and apple! So good!
