Dessert Bar ideas

I'm looking for more ideas for our dessert bar. Whatever we choose will be homemade with love by my friends and familywe all like to cook and bake. There will be about 70 at our simple winter wedding and reception. Some ideas: several kinds of cheesecake for sure, several kinds of wedding cupcakes, fancy brownies, choc dipped rice krispie treats possibly, homemade candies, mixed fruit, nuts, fancy cheese...what other kinds of desserts have you all had that would be delicious, a little out of the ordinary, but not too fancy? I'm also wondering if we should have a narrower selection with enough of every choice for everyone, or a wider selection, but not enough for everyone to sample every item.

    I'm not sure how you'd feel about them, but what about homemade truffles?  I have recipes for awesome Oreo Truffles, Chocolate Chip Cookie Dough Truffles, and even Cake Batter Truffles.  They're bite-sized, so they'd be great for a dessert buffet since people could sample a few.  Let me know if you want any recipes!

    Would absolutely love your recipes!!!! I'm not a truffle eater but most people are. I would love to learn to make them, they sound perfect! Since others would enjoy the recipes would it be possible to post them here? Thank you!!!!!

    Oreo truffles/Oreo balls are amazing.  Quite possibly the most amazing thing ever.  :D

    I also love brownies with powdered sugar.  I've seen people use stencils to get a pattern on top.  Turtle brownies are a little more fancy, but I'm not a huge caramel fan so they're not as much for me.  There are some tasty recipes around the internet for oreo brownies and also a marbled chococlate chip cookie and brownie, um, brownie.

    I love brownies.  And Oreos.  And I'm slowly thinking I want brownies at my reception.

    I love the Oreo truffles too. I just had them for the first time from a bake sale and I FLIPPED. OUT. They were so good. I feel guilty 'cause I got a little baggie and I didn't even save any for my fiance. They get my vote.

    OP, another brownie-type option would be peanut butter cup brownie bites (don't know what they're called, but that's the best way I know to describe them).  Use a mini-muffin pan and your favorite plain brownie mix (without any extras like chocolate chips or nuts), fill the mini-cupcake-papers (foil works best) 1/3-1/2 full with batter, top with an unwrapped small peanut butter cup and top with another dollop of brownie batter.  Bake as usual (they sometimes take a little longer).  You wind up with a simple-looking mini brownie cupcake with a surprise inside (you may want to label them for the sake of allergy issues)!  I've also done it with mint-filled cups and caramel cups (Walmart) topped with chopped pecans.

    These could also work with chocolate cookie dough and mint or caramel cups.

    Have you thought about mini-cheesecakes?  They are usually pretty popular.  Use foil liners on a standard-size muffin tin, use a vanilla wafer cookie as the "crust" in the bottom of each and use your preferred cheesecake recipe (fill cups about 2/3 full).  You could offer some plain, and some with toppings (fruit, chocolate shavings, etc.)

    Pre-made phyllo/filo mini tart shells might also be worth exploring -- you can use a huge variety of fillings for a pretty and not-too-labor-intensive option.

    It makes the process go more smoothly if you load the brownie batter into something like a pastry bag with an open tip (I use the Pampered Chef decorator thing that looks like a caulk gun).  Sometimes it's easier to squirt than to spoon (especially if you are making a lot of them!).

    Oreo Truffles

    Ingredients

    • 1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
    • 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
    • 2 (8 ounce) packages BAKER'S Semi-Sweet Baking Chocolate, melted

    Directions

    1. Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
    2. Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
    3. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

    Easy Cake Batter Truffles


    1 ½ cups flour
    1 cup yellow cake mix
    ½ cup unsalted butter, softened
    ½ cup white sugar
    1 teaspoon vanilla
    1/8 teaspoon salt
    3-4 Tablespoons milk
    2 Tablespoons sprinkles

    Truffle Coating:
    16 ounces (8 squares) almond bark (or white candy melts)
    4 Tablespoons yellow cake mix
    Sprinkles
    
    Beat together butter and sugar using an electric mixer until combined. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency. Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.
    
    While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Once melted, quickly stir in cake mix until incorporated completely. Using a fork, dip truffles into almond bark and shake of excess bark by tapping the bottom of the fork on the side of your bowl. Place truffle back on the cookie sheet and top with sprinkles. Repeat with remaining balls until finished.

    Chill cake batter truffles in the refrigerator until serving. Makes around 24-30 truffles.

    Chocolate Chip Cookie Dough Truffles

    Yield: 3-4 dozen

    Prep Time: 1 hour

    Total Time: 2 1/2 hours

    Ingredients:

    2 1/2 cups all purpose flour
    1 teaspoon salt
    1/4 teaspoon baking soda
    1 cup (2 sticks) butter or margarine, room temperature
    3/4 cup granulated sugar
    3/4 cup packed brown sugar
    1 teaspoon vanilla
    1/3 cup milk or soy milk
    1 cup mini semi-sweet chocolate chips

    14 oz dark chocolate candy coating

    Directions:

    Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add soymilk and vanilla. Stir in flour, baking soda and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips.

    Cover and chill dough for 1 hour.

    When dough is firm enough to handle (it may help to lightly flour your hands), form dough into 1" balls and arrange on a baking sheet lined with waxed paper. Place sheets in freezer and let chill for 30 minutes.

    Melt chocolate candy coating in a double boiler or in microwave according to package directions. Using forks or a dipping tool, dip cookie balls into candy coating to cover. Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets. Chill until set. Store, chilled, in an airtight container for up to 1 week (though good luck making them last that long).
