    We are using: key lime curd, raspberry jam, rasperry buttercream, and cream cheese. The key lime curd is to die for.

    We used mint chocolate (in a chocolate chip cake layer), almond (in a vanilla bean layer), and coconut.

    We're doing a different flavor for each tier, so:

    lemon curd with raspberry jam/compote on white cake

    hazelnut mousse on some sort of chocolate cake

    dreamsicle with orange curd and mousse

    there may be a 4th tier, but not sure yet

    bottom layer: fresh strawberries and cream (vanilla cake)
    middle layer: chocolate truffle (half vanilla cake, half chocolate cake)
    top layer: cream cheese (red velvet cake)

    Still deciding but we are thinking of:
    vanilla bean cake with fresh rasberries
    chocolate rasberry ganache on chocolate cake
    vanilla cake with poached pears
    mango-passionfruit-pineapple tropical cake

    Everyone's sounds delish! I love Red Vevet; but FI doesn't, so... I guess that will be for the girly party time. :)

    Alternating layers of chocolate and mocha fillings in four tiers of white cake.

    We are doing a kahlua cake with french vanilla pastry cream.  We liked the cream because it was nice and light.  But we did have a cannoli cream with it that was delish!

    Our fillings are white chocolate mousse with white wedding cake and whipped cream filling with italian cream cake. I really wanted a cocanut filling and FI really wanted a banana filling, but we could both agree on the others so we scrapped the third.

    We THINK we decided;
    chocolate cake with peanutbutter filling
    white cake with strawberry filling
    & the top burnt sugar

    Three layers:

    Bottom: Chocolate with hazelnut filling (to die for!)
    Middle: White with Bavarian cream filling (also super yummy)
    Top: Another choc w/ hazelnut for us to keep

    Outside is covered with buttercream frosting.

    But your choice will really depend on your baker and what he/she does best! Keep in mind that many bakers charge extra for anything over "standard", i.e. extra for fondant (no one eats it, anyway), special colors of icing, fresh berries in filling, etc....

    P.S. Cake tasting was the funnest part of wedding planning!

    white chocolate mousse! We haven't decided What cake flavors we are using, but during our tasting all the cake flavors tasted delicious with our white chocolate mousse, and our cake is going to be covered with white chocolate shavings, so it will be the perfect filling!

    We haven't finalized yet either but have narrowed the options to:
    Yellow Cake with either fresh strawberries or kiwi/peach.
    Chocolate Cake with Rasberry or Mint.

    We are going to do some layers yellow and some chocolate so there'll be a little something for everyone!

    I am not sure what we will use yet!  Too many to decide from.

    A note to those choosing Hazelnut or nut fillings:  Make sure your guests know of the flavors beforehand.  My FSIL is allergic to nuts, even to hazelnut flavored coffee creamer!  So is my MOH, so I will not be having ANY nuts at all of any kind in the wedding.

    We are alternating our cake layers, and each with different fillings:
    From the top down-6", 8", 10", and 12"-

    Chocolate cake with cream cheese filling
    Yellow cake with lemon filling
    Chocolate cake with raspberry filling
    Yellow cake with custard filling

    The entire cake will be covered with buttercream icing.  I will be taking fabric samples to the bakery so that the icing will match my ivory dress and the calla lily topper will match the victorian lilac of my bridesmaid dresses.

    We're going with lemon curd in one layer and raspberry filling in the other two layers.  Our cake is lemon with buttercream frosting. 

    Chocolate ganache would also make a FABULOUS filling... or try something with almond flavoring.

    We're doing a three tier (was two now we've decided three because the price is amazingly inexpensive) cake to cut with two full sheet cakes being cut for cake in the back (that's what saved us so much money because we're paying just over $1 a slice for the sheet cakes and they feed 96 EACH).  The sheet cakes we're doing one in chocolate and one in white cake (both super moist and good) covered in vanilla buttercream frosting probably with strawberry preserves filling (which was AMAZING).  The tiered cake we're having one chocolate, one white and one swirled tier.  All of which we're going to serve to our bridal party and immediate family.  We're not keeping our top layer because the baker is local and we've bought a cake from them before and it only cost us $20 or so for a small round ready made cake.

    You choose what you like.  We're huge fruit people, especially strawberries so it's perfect for us.  Go to your cake baker and ask to try different filling flavors with some cake.  We tasted some fancier flavors with another baker and weren't as impressed as we were with the simplistic nature and taste of the cake from the baker we chose.  Good luck!  And like another bride said, it's the most fun part of planning!
