Future FIL BBQing & Your Thoughts On This Menu...

From the beginning, my fiance's dad said that he wants to do the food and will gather a lot of his friends together to BBQ for our wedding and they would be happy to do it. Our reception site is located in a State Park and has at least 2 large grills near the site and another few grills a little further away that we are renting to use. We are going to probably have around 100 people at the reception. I am a little worried about all of the work involved in DIYing our own food. We live in a small community where basically the only caterers are grocery stores and we do not want to have that generic fried chicken w/ mashed potatoes that EVERYONE has for every type of event, at least in this area. Therefore, we decided that we are going to go the more laid back BBQ route.

Here is my idea for a menu so far:

Marinated shrimp skewers
Chicken and/or beef kabobs
Hambugers
Hotdogs
Sausage/cheese platter
Maybe baked coconut shrimp w/ citrus dipping sauce
Also thinking about maybe grilled fruit and/or vegetables such as squash, asparagus, pine apple, peaches, etc...
Cake for dessert

So we won't have ALL of that but thats just what I'm starting with now. If we have 100 guests would we need 100 hot dogs, 100 hamburgers, etc.? Or like maybe 50 of each??? Also, I am too scared to do anything like potato salad/coleslaw... Do you think a combination of those above food items would be enough?? Any suggestions?? Thanks in advance for the advice!

    I definitely would say sides are missing. Definitely a pasta salad or potato salad would go well with your menu, baked beans, house or caesar salad, corn on the cob, veggie kabobs, fresh veggies and dip, fresh fruit display, grilled fruit, fruit salad...obviously not all of the above, just throwing out ideas.  You could also do a baked potato bar pretty easily that would go fairly well.  Bake up lots of potatos in advance and have a buffet of toppings for people to add.

    In terms of how much to get really depends on what the final menu is.  A lot of people will have 1 hot dog and 1 hamburger.   Or, if they are just eating hot dogs, most people will eat 2-3 of those.  Especially if it is a buffet where people can keep munching for a couple hours.

    So far our menu is panning out like this:

    cocktail hour"
    multiple cheeses
    summer sausage
    some deli meats
    many flavored crackers
    a few cheese/spreadable dips
    Possibly fruit/veggies but dinner is not far after

    Smoked pulled pork
    Smoked pulled chicken
    2-4 types of bbq sauces for dipping
    hotdogs (for kids but if adults want them cool)
    bushes baked beans (I won't cave on this haha)
    pasta salad
    potato salad
    LOTS of bread options
    Huge salad bar

    Up for discussion is:
    macaroni salad
    macaroni
    green beans
    corn

    we don't have to sit down until mid january when our rsvps come in and we get a headcount to finalize.


    Dessert: mini cupcakes in chocolate, vanilla, and red velvet and square cheesecake bites in raspberry truffle, turtle, and plain.
