Requesting a Cake Change

We love this one baker we met with..we love the filling, we love the add ons and pricing, we love the customer service, the batter is average, and the icing is awful.    Has anyone ever asked a baker to change their icing? How'd it go?

    Personally, my vote is for a great tasting cake over the personality of the baker.  I'd try finding another baker.

    If you choose to stay with this baker, you could ask if she has any other frosting selections that you could taste...if you find one that is good-select a cake that would go with that frosting. ( i.e. if she makes a good cream cheese frosting, choose a carrot cake or a red velvet cake). 

    I think making a suggestion to a baker to change her frosting would be on the rude side, and she/he might take great offense.

    This.  I'm sure if you keep looking you can find someone with tasty cake as well as good customer service.  And if I had to choose one, it would be the taste, since that's all your guests are going to experience.

    Is the icing you're referring to fondant?  It's gonna probably taste weird no matter who you use.

    Even if it is the fondant,  she also said the batter is 'average', which isn't exactly a glowing recommendation.

    Fondant doesn't always taste "weird".  Depends on the brand.

    The icing is buttercream. It is just TOO sweet. We have been to 4 bakers and all are just average. I guess we will have to keep looking.

    I would call around to other bakers and ask what type of frostings they offer. American buttercream is probably what you have had and it tends to be pretty sweet. It's basically butter/shortening, powdered sugar, a little milk, and flavoring (vanilla, etc.) If you want a less sweet frosting you're probably going to want a meringue based buttercream, such as Italian meringue buttercream or Swiss meringue buttercream, or possibly a whipped frosting. The meringue buttercreams are basically made with egg whites, sugar, and butter and tend to be less sweet but they can also be harder to get a smooth finish on which is why some bakers don't use them. I would keep looking until you find a baker with cake and frosting that you really like. Good cutstomer service should be a given for any professional baker and if they don't have good service they probably won't be in business for long.
