Texas Hash and corn muffins

Lobster asked for this, so I figured I'd post it in a new discussion.

There's no real recipe for my version of Texas Hash, but here's the lowdown.

Sautee two cloves of garlic in olive oil (I love garlic, use your discretion, and make sure your handsome men eat it too, so it won't be just you smelling like te 'stinking rose')

Brown lean ground beef, season to taste.

Add veggies of your choice (I used mushrooms, peppers, corn and spinach this time)

Add tomato sauce of choice. You can also add canned/stewed tomatoes if you want.

Add 1 cup of water. Simmer for an hour.

After the hour, add 1 cup of quick cooking rice. (I used brown minute rice). Remove from heat and let stand for 5-10 minutes.


The corn muffin recipe came from "The LooneySpoons collection" 

1 cup all purpose flour
1 cup yellow cornmeal
2tbsp granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 can (14 oz/398 ml) cream-style corn
1/2 cup buttermilk
1 egg
2 tbsp butter, melted
1 can (4.5 oz/128 ml) diced chilies

Preheat oven to 375 degrees and spray muffin pan with cooking spray.

Mix wet and dry ingredients seperately. Combine - just to moisten. Divide batter between 12 muffin cup. Bake for 20 minutes (be careful not to overbake). Remove from pan and cool slightly - best if enjoyed warm.

(Each muffin has a calorie count of 147, 3g total fat, 4g protein, 27g carbs, 1.3g fiber)
