Wanted: Lunch ideas

I love the overnight oats. They are so easy in the morning. Now, I need a lunch suggestion I can make the night before.

I would like some lunch ideas that are filling but not sandwiches! Also something that is kinda inexpensive. (We are saving for a refridgerator and currently are using a dorm fridge.) At work I have access to a water heater, microwave, and refridgerator.

  • I make chicken salad and add different stuff so I dont get bored.  I just buy a family pack of chicken ($10) and boil it.  each day I cut up a chicken and add whatever for the day.  This one is great with or without lettuce

  • Today's lunch was easy, filling and nutritios!

    Multigrain wrap (I had Dempster's Anticent Grains)
    large handful of baby spinach
    1 full can of chunk light tuna in water
    1/2 diced avocado
    ~ 1 Tbsp of balsamic vinaigrette

    It's good with sprouts, or tomatoes or green onion too!

  • My fiance and I have been shelling out a little money each grocery visit and buying Amy's frozen meals. They are VERY satisfactory and organic! Try the stuffed shells!!

  • i rarely make anything for lunch, usually rely on dinner leftovers. About once a month i will make a big pot of chili and freeze it for times when we don't have enough leftovers for lunches.

  • I'm going to second Raynes on this one.  I make myself a wrap every day - whole grain wrap + turkey/roastbeef/chicken + cut up fresh vegetables (peppers, tomatoes, carrots, celery).  Yummy.

    If you don't want sandwiches because you think the calorie count is bad, I'd research multigrain breads and the dietary goodness they have.

    No, I don't want sandwiches b/c I'm such a picky eater and I'm sick of eating the same two sandwiches every other day. :/

    Haha.  Understandable.

    Salads are excellent - you can switch up what goes in there.  I just choose to roll everything that I'd put in a salad up into a wrap.  Easier to eat.

  • I make the same salad base every night.  Romaine lettuce, chopped red onion, chopped mushrooms, chopped carrots.  I add a can of tuna or chicken or salmon or sometimes ham as a treat and put hot sauce on it.  I know, it's so incredibly boring, but I actually look forward to it every day.  I am a Frank's fanatic!

    Oh, I have a Greek yogurt too. And sometimes left overs, especially because I make so many soups in my Crock Pot on Sundays.

  • greek yogurt with granola is a good substitute plus chobani has a ton of different flavors!

  • Whole weat pasta with marinara (figure out portion size for what works for you).  Also with it have salad with just chicken and oil and vinegar dressing.

  • Michelina's Lean Gourmet are my favorite pre-packaged items and they're usually only 1.00 a piece.  I have no idea why they are so cheap because I think they are way, way better than the other, similar meals (Healthy Choice, Lean Cuisine, Smart Ones,etc) 

    I also like to eat Whole Foods sushi at lunch.  It's not the cheapest option, but if you mix it in with the cheap Michelina's, each week's total is not bad. 

    Also, sometimes I like to eat an entire bag of Pictsweet steamable edamame in the pod.  275 calories, tons of protein, tons of fiber.
