Re: healthy meal ideas

  • oatmeal is great and really filling.
    Egg and veggie scramble,
peanut butter toast and a piece of fruit,
    egg and cheese quesadilla,
ham, egg, and chees english muffin

This is what I have for bfast every day, both the oatmeal and egg whites (and I love it so I don't get bored, but that's just me):

-1/3 cup (pre-cooked) oatmeal, made w/ 1/3 cup soy milk & 1/3 cup water, 1 heaping tbsp ground flax seed, 1 tbsp wheat germ. I have the instant oatmeal so I nuke it, and sometimes I'll put a little bit of honey on top.
-1/3 cup (pre-cooked) egg whites, I pour this into a bowl and nuke it as well. Topped with a small shake of salt & pepper, and some hot sauce.

Lunches (each '-' is one lunch):
-4 oz shrimp, 1.5 cups spinach, 2 tsps balsamic vinaigrette. 1/2 cup brown rice
-4 oz roasted sweet potato, 4oz chicken breast, 4 oz asparagus
-4 oz white fish, 4 oz asparagus, 10 almonds (this one may be hard if you're at work, due to the fish smell)

I also make sure to eat 5 meals a day, which leaves me plenty full :) so between bfast and lunch I have a snack of 1 scoop whey protein shake and 2 rice crackers w/ a tbsp natural peanut butter split between each. And my afternoon snack is 4oz sweet potato and 4 oz ground turkey (99% fat free, or as lean as you can find in the grocery store).

ETA: 'pre-cooked' means the measurement before cooking, I don't have magical pre-cooked egg whites :)

  • thanks for the great ideas!
  • I think that the Kroger brand Active Lifestyle Chai Apple instant oatmeal (170 cals) is really good and pretty filling.  That said, though, hardly anything I eat at 8 keeps me satisfied past 10.  That's about the time when I usually have a Chobani greek yogurt (140 cals).

For lunch I've stopped eating Lean Cuisines and instead eat steamed squash, zuccini, and asparagus with some of those Perdue chicken pieces that you can buy already cooked (kind of near the sliced sandwich meat section at the grocery store).  I'm not much of a cook so steaming veggies the night before is my version of cooking.  I can't tell myself yet but the scale shows that I have lost 4 lbs so far... this lunch is alot less caloric than Lean Cuisines/Healthy Choice frozen meals.
