Easy Taco Soup

2 lb ground beef (use lean... the regular stuff is gross!)
1 medium onion, chopped
1 pkg taco seasoning
1 pkg ranch dip mix
1 can pinto beans... See More
1 can kidney beans
1 can mild chopped green chillies
1 can corn
1 can black olives, drained
2 cans diced tomatoes
4-5 cups water, depending on desired thickness of soup

Brown the beef with a little oil. Add onions. Add seasoning packages. Dump all ingredients together (drain olives), and heat. Top with crushed tortilla chips, cheddar cheese, and sour cream.

For WW people, it's about 3 points per 1 cup without the toppings. It's delish!!!

  • I substituted 3 chicken breasts for the beef this yesterday and stuck it in the crock pot on low for about 6 hours. It's soooo good!
  • I make taco soup all the time (usually just throw a bunch of stuff from the fridge and pantry together and season it)... and my favorite substitute for corn is hominy. If you've never had it, you must try it! Sooo good. I never thought to put ranch dip mix in it, though.. I'll have to try that.
