Our wedding has a nature theme, but since it is in April in MI we are having it indoors in an atrium. For favors we wanted to kinda tie in the "outdoor" theme by giving out something like trail mix or chex mix in a mini brown paper bag tied with twine and our bird/deer stamp. We aren't having a late night snack bar so we thought we'd give out mini cake balls so people had something salty and sweet to snack on after drinking and dancing. Is this acceptable or should we come up with something else?

This sounds like a great idea! I would lean towards trail mix instead of Chex mix, but you could really have fun with this! Sweet and salty is always a hit in my book, especially as a late night snack.
