I  want a simple hand tied bouquet of roses for me and my bridesmaids, rose bouts and corsages...  FI really wants gerbera daisies for our centerpieces.  Would it look strange to have different flowers for the bridal party vs the table decor?

FI thinks it will look fine, but for some reason it just seems odd to me...

It won't look odd as long as it is in the same color. Keep in mind that gerber daisies and sunflowers tend to go with a more casual feel; however how much do our guys really ask for things in the wedding? My guy asked for two things. The pastor and koozies as favors. I say go with gerbers and make your FI happy. I promise you that no one will judge you for it.
