I am thinking about doing centerpieces that involve flowers heads- the stems cut off- on the table (out of water)

what flowers hold up best out of water and with the stems cut off?!

Carnations, mums, lavender, black eyed Susans, baby's breath. I might include daisies if you are talking about only a few hours.

Technically a plant, but succulents hold up for a very long time.
