Texas-Dallas and Ft. Worth

Can you proof my menu?

Cityplace is saying this menu doesn't lend itself to a sit-down dinner and is now suggesting we not offer 100% seating, which I (and my coordinator) find ridiculous.  They do have me worried that it's not enough food.  Thoughts?

"Here's what we've come up with for estimated 250 guests:
Two Hors D'oeuvres:
Smoked salmon mousse croustade with caper relish
Hearts of palm, mango, and prosciutto
Stations:
Carving Station: Carved barbecue beef brisket, mesquite chicken, and
smoked sausage served with house barbecue
sauce, assorted relishes, and mini rolls
Quesadilla Station:  Baby shrimp, spinach, and mushrooms with roasted
peppers and queso fresco;  Grilled portabella mushroom, grilled
vegetables, and caramelized onions
Cityplace Salad"

So, our coordinator recommended maybe adding one other station, but I really feel like that's going to be plenty of food... maybe not enough vegetables or sides, but lots of food.

    Maybe one more appetizer. Something simple for those people who are picky.

    I think you have lots of vegetables!  We also did a mashed potato bar and it really is a big hit with people. It might be a good option to balance out your meat.

    What time is your reception set for?

    Your menu is somewhat similar to ours, with the carving station and action station but we did 3 hot and 3 cold hors d'oeuvres.

    I would do maybe a couple more appetizers, unless this is close to dinnertime then maybe something a little heavier.

    ETA: I do have to say I understand where they are coming from with the seating comment. When I see apps and stations, I see people milling about...

    I'm gonna be honest and mention my cousin's wedding that had a similar menu... we had to go out for food afterwards. Although, it very well could have been a space/layout issue. Like the lines for food were so long, we were hesitant to go see if there was enough for seconds. Maybe ask how long guests should expect to wait for food with the number of staff you've hired?

    And as for the seating - I think you and your coordinator are totally right. Every person needs a seat. I definitely wouldn't want to be forced to eat my Cityplace Salad standing up!

    Wendi and Jen, I see what you're saying.  We opted against a mashed potato bar because we felt the meat would be really heavy, but I think it would be a nice touch.  Cityplace actually has a risotto bar that I really wanted, so if the cost isn't ridiculous, we might look into that.

    Thanks for your input, y'all!  We were actually worried that it would be too much food!

    Edit: I think we're looking at serving dinner around 5:30-6:00, with the reception ending at 8:30.

    Laura, that's what I'm afraid of -- long lines!  We were hoping they'd spread the stations out to reduce that, or set them out in a line like a buffet so guests can just mill through.

    Do a tasting with the risotto, because I almost did that but it was not good at the tasting so we switched.
