Re: Recipe Thursday!!! Edit: Fish Edition!!! (or....)

  • We don't cook fish around here, but I decided to put my lame momma can't cook recipe up today that even my FI loves, but really doesn't count as a receipe because the only cooking involved is boiling water Laughing

Boil a bunch of water, toss in Buttoni refrigerated pasta.  Cook for 9 minutes then toss in a bag of frozen peas for about 30 seconds.  Drain and add about half a jar of your favorite alfredo pasta sauce and half a jar of your favorite pesto pasta sauce.  Mix it all together and watch your kids make it all disappear in under a minute Cool

  • LM I make tilapia alllll the time because it's so good and super easy. Here's what I do:

Make sure the fish is thawed and pat it dry to get off all the excess water. Season the filets with salt, pepper and lemon pepper. Put some olive oil and butter/margarine in a pan and get it melting and hot. Put the filets in seasoned side down and then season the other side.

When the filets are slightly browned on one side, flip them over. After a few minutes, pour some white wine in the pan to just under half way up the filets. Let the alcohol cook off and cook the filets until the wine is pretty much evaporated and the fish is flaky. Season with some parmesan cheese and you're done! Quick and easy :)

  • I am in some need of new fish recipes too!!

I make tilapia oreganata.  I buy my tilapia fresh I don't like the frozen kind it just has a different texture to me for some reason.

Mix breadcrumbs, parm cheese and very finely chopped parsley into a bowl.  Then mix about a tbsp of olive oil in the breadcrumb mixture.  Put pieces of tilapia on a baking sheet and spoon the mixture over the tilapia.  I then drizzle olive oil on the top as well this will make the breadcrumbs crispy.  Then bake in the oven on 350 for about 15 minutes or so.

  • If you like thai food and/or curry, this recipe is SO GOOD
I use swai instead of tilapia, I hadn't ever tried it until a few months ago, but it was on sale and looked like tilapia so I got it and it's my absolute favorite fish now.

  • i really love fish, but the smell of it cooking makes my stomach hurt (and seems to linger in my apartment longer than i like) so i don't cook fish often :(

I made these Southwest-inspired Stuffed Peppers with 99% fat free ground turkey breast for fiance and I this week though, and they were a huge hit! and super easy! I would just recommend pre-cooking the peppers by themselves in the oven first to soften them up - I did them for about 30 minutes on 350 while I was prepping the filling. they made great leftovers for lunches the next day too!

you should be friends with my fiance, bells! Fiance told me that for the next holiday we celebrate, he wants a bacon t-shirt. His favorite gift this Christmas was the golden bacon Christmas tree ornament I gave him.  And his most recent purchase? Maple bacon ice cream from our farmer's market.

We also make a lot of tilapia. This recipe is very yummy: http://allrecipes.com/recipe/lemon-garlic-tilapia/detail.aspx

I also looove a salmon recipe my mom makes and it's extremely simple! All you need is salmon steaks, white wine and a seasoning called "adobo" found in the latin/ hispanic section. The brand is called Goya and the seasoning is yellow with a red or blue (or green?) cap. Btw even if you don't make this recipe, you'll love to have this seasoning on hand... I use it for EVERYTHING! Back to the salmon, season the fish steak with adobo, pour on some white wine and bake it in the oven until done! It's one of my faves :)
