  • I made this last night:

It's skillet lasagna...I only used half of the ground beef, and used non-fat sour cream to keep it healthier.  It was so easy (and quick!) to make, and there are tons of leftovers!

  • Also, I'm looking for a good and healthy granola bar recipe.  I could look on Pinterest, but I'd like to hear ones that you ladies have tried already

  • I don't have any recipes this week however...FI & I always bought our meat from Walmart...costing us around $80 just for 8pc. boneless chicken, and 5lbs ground beef...maybe a good deal on steaks or pork chops....Well, we learned our lesson & listened to some people...We now go to one of the butchers in town...I hadn't gone with FI (normally he goes because it is on his way to work)...I went with him, we got a buttload of food: pork shoulder (cut in half to have pulled pork twice!), 3lbs ground chuck, 1lb brats, 4 pcs. of fish, & 3 stuffed pork chops for $56!  I was soo excited!! hahaha...
  • ooooo mekiakoo i have made a version of that which inclues a package of cream cheese, a can of beans, and a can of corn. it is TO DIE FOR!

this is my new obsession for breakfast - a girl over on the getting in shape board shared it, and I have been making different versions of it every night. yesterday I did a version with almond milk + fresh strawberries - SO GOOD!

(for the record - i haven't been using the chia seeds and it still comes out fabulously!)
  • Both those recipes sound so good! Definitely trying them next week.

  • Ally - these are KIND of like granola bars, only better:
    http://www.adashofcompassion.com/2011/01/raw-cookie-dough-bites/

I have made them 3 different times now and I like to keep a batch in my freezer. Sometimes I will eat one before a yoga class or a workout, and even one of them gives me tons of energy since they are full of almonds + walnuts.

the best part is, they literally take about 5 minutes to make.

  • Those cookie bites look awesome!
I made spinach pesto for pasta and crab cakes on Monday night.  They both turned out better than I expected.

Spinach pesto (I used frozen spinach) http://allrecipes.com/recipe/spinach-basil-pesto/detail.aspx

Crabcakes (Used canned crab because we hadn't been to the grocery store yet after vacation: http://allrecipes.com/recipe/best-ever-crab-cakes/detail.aspx

</div><div>They come out really good, but they tend to fall apart. I think I need to bake them longer maybe? If you make them, let me know how they turn out!</div>
