Cinco de Mayo/Southwestern/Mexican Theme?

Hi! 

I'm newish to the boards (I've been lurking for a while, but this is my first post).  We're looking at a wedding date of June 2011 and I'm trying to get as much squared away as soon as possible!

We want a Cinco de Mayo-vibe to our wedding and are planning having Blue Mesa cater our reception with their famous brunch (we're planning on buying out the restaurant for the reception).

I guess I'm looking for any ideas from my fellow Dallasites as far as Mexican bakeries (for the cakes, as well as Mexican Wedding Cookies), a place where I can get a vibrantly-colored dress (see page 66 of Real Simple Weddings for my inspiration), and any other ideas that you may have! 

I'm also trying to find a ceremony venue near either the Dallas/Northpark location or the Addison location that would accomodate about 100 people.  Thing is, the ceremony & reception are both going to be pretty casual and we want a short & sweet ceremony, so I don't want to shell out major dough for a room/venue/park that we'll only use for 1 hour total (including set up & breakdown).

Any ideas or advice would be much appreciated!  :)
