Vegan/Vegetarian Catering?

To keep this short, does anyone know of a good catering company that works with a decent variety of vegetable? Being the bride, I want to eat something more than just a salad and a side dish. Other than me there's possibly one other person who would have dietary restrictions (theirs is based on religion).

I bet most caterers can work with you to come up with a great menu.

Not vegan, but we have eggplant parm (which was delish at our tasting!) in our menu from CN Catering.

also, you might consider Spiral Diner. they don't do catering where they come serve the food, but you can do catering orders. if you haven't been there, you NEED to go NOW. the original is in FW, and there's one in Oak Cliff in Dallas now. FOR SERIOUS, it's awesome food.

Ooh, I have to try this Spiral Diner! While I'm not a vegetarian, I really enjoy vegetarian food and cook a lot of meatless meals.
