What kind of chicken should I have?

We are having our wedding at the Village Country Club and we cannot figure out what kind of chicken to have. We chose on doing a steak and a chicken. Steak is fine, but the chickens we tried fromt there were not that great. We tried chicken picatta, marsala, and the one with proscuitto in it (the name is slipping my mind). All of them were just Eh. Anybody have any ideas? They said if we find a recipe we want they would make it for us. Thanks!

    Anything with a sauce, because chicken can get so dry when you are serving it to a crowd.  We are doing Chicken Veronique at our wedding-- it has a creamy butter white wine sauce.  Here's a recipe: http://www.epicurious.com/recipes/food/views/Chicken-Cutlets-Veronique-103267

    maybe a chicken with pesto sauce? the ones you tried seem like the go-to recipes so it's odd that they weren't that great. i agree with PP that you definitely need a sauce.

    That's what I thought about the ones we tried. I mean the chicken marsala was ok, but the proscuiotto one was wayyyy too peppery and the picatta had avocado and lime? That was weird. Also the spinach and artichoke one had way too much cheese and was just too rich. Ugh out of everything this is proving to be one of the hardest.
