Sand Ceremony without an officiant?

My FI and I are eloping in Las Vegas at the end of February. It will be ONLY us two. No one else. Our families asked that we hold a reception afterward at home so that they can celebrate with us. We agreed and our reception will be held a month later (3/31/12) in our city. FI's family is flying in and my family will be there. Here is my question:

We are only doing a reception with dinner, drinks, dancing, etc. But we would like to do a sand ceremony with my daughter since we are uniting not only my FI and I, but my daughter as well. She sees my FI as her dad because her bio is not in the picture. But, how should we word it and should we just annonce the thing ourselves? We plan to do the sand ceremony as soon as the reception starts and follow it directly with dinner. We are doing something "dressy-casual" so its not anything formal or extravagant. Please offer any suggestions. We really would like to include our daughter by doing the sand ceremony since she will not be in Vegas with us for our official ceremony. My FI also plans to get her a necklace to give her then. Thank you for any suggestions! :)
