Yes, of course you can.  Though if they'll be your only attendants, I'd just call them both bridesmaids and groomsmen.

Yes, but they'd be Best Men and Matrons of Honor.

The term Matron of Honor also refers specifically to a married woman.  So if you have two friends and one is married, and one unmarried, technically you'd have a Maid of Honor, and a Matron of Honor.

We plan to have two best men, actually -- a bride's best man (my son, who will be 18) and a groom's best man.  That's the extent of the teeny, tiny wedding party.  LOL!

I have "Co-Matrons of Honor" - my FI is having one BM and one GM.  We are also having a teeny, tiny wedding party.

I have a maid of honor and a matron of honor.  My Fiance has just one best man - his twin brother.  Do whatever makes you happy!
