Combining Celtic (Irish) and Polish wedding traditions

I have a Claddagh ring but it's a pinky ring rather than my engagement ring.  My fiance wants to do a Polish receiving line.  Rather than having a piano, an organ or a string quartet during the ceremony for music I would like to have bagpipes.  What I'm wondering is what other Polish wedding traditions we can incorporate into the ceremony and/or reception and what Celtic/Irish tradtions we can incorporate as well?  Any thoughts ladies?

    I just got married in Ireland last month.

    The harp is actually more Irish than bag pipes are.

    Actually, my fiance is Catholic but I'm Anglican (Church of England) so it won't be a Catholic Mass and it won't be in a church.  Also, the minister marrying us (or rather the person we want to ask) is a Baptist minister that my sister and I grew up with so, essentially, this will be a non-denominational ceremony.  I think there is a Polish blessing as well - I seem to recall something at my fiance's cousins wedding a couple of years ago - and I will try to track down the Irish wedding blessing at the same time.  I would love to incorporate some Polish food into the reception - Pierogi are my weakness - and, as I mentioned, my fiance wants a Polish receiving line.  Anyway, thanks for the suggestions.
