The wedding time and how long?

I plan to have my wedding on a Saturday. I would like it in the evening. What times are okay to start at and how long should it last?

Our timeline is:
ceremony 3pm
cocktail hour immediately following
dinner @5
reception will be over 10:30, we have to be out of the venue for the day by 11pm
Also, we have 6 hours of open bar, so we had to consider that in figuring out our times.  The bar will be open from 3:30-5, closed for an hour over dinner, then open from 6-10:30.

We have our ceremony at 5:30, cocktails from 6-7, dinner at 7, and then dancing, etc. until midnight. But our reception is pretty long-- the venue's standard is ceremony at 5:30 and the reception over by 10:30.

our ceremony at the church is at 5pm
cocktail hour 7-8
dinner/dancing-8-1

M2N, is your ceremony going to last two hours? Because if it isn't, you should move your cocktail hour up a few hours.
