Do you typically order enough (and a little extra) just to cover the guys? so...if 100 women, 100 men are coming, I should order 112 kippot?

I think it depends on your guests:1. don't assume your non-Jewish guests won't take one2. will your female guests wear kippot?3. how many kids, if any? With 200 people, I think you'd be safer with 150.
