We're having a small wedding (about 70) and I had been planning on making my own cake. I'm gluten free and so are a handful of family members. The plan was to bake the cakes ahead and freeze them and then frost them the day before and assemble at the restaurant the day of. This sounded totally sane when I first thought about it.
Well, yesterday we tried a cake I had frozen that was moist and delicious when fresh but was completely dried out and gross after freezing. I know most pros freeze their cakes, so maybe it's just something with the gluten free flours.
Which means I would need to bake and frost the entire cake the day before in time to be at the rehersal at 6. Plus, I'd have to get the cake to the restaurant and assemble and decorate it the morning of the wedding. And our ceremony is at noon. I just don't think it's doable.
I've tried calling around and almost no one does a gluten free cake. The one place I found starts at almost $1,000. We're doing a low budget wedding so that's just not an option.
The only thing I can come up with is to do a small cake for us to cut and individual cupcakes. I don't really like the look of the wedding cupcake stands. Would it be bad to have each person's cupcake on a dessert plate at their place setting? Or perhaps have the staff bring them out on dessert plates after dinner? Or does anyone have any other suggestions? I'm not thrilled about the idea of cupcakes
