Sounds delicious! The one thing that jumps out at me is that there's no vegetarian entree, but if that's not an issue for your guests, then don't worry about it!

I thought of doing portobello mushrooms something or other but it jsut made it really expensive, so I paired down what was originally on the list (A LOT) and figured that if I actually do have some vegetarians (which I dont think I do off hand) then they could eat the veggie rolls and the roasted and grilled veggies without worry.

my vegetarian friends were very thankful that i had a veg entree, but they all assured me that w/o it, they'd be fine, since they usually eat salad, mashed potatoes, bread, and call it good at other weddings...so if you can't think of any vegetarian friends...they'll make it work with the grilled veggies, potatoes, rolls, salad, AND egg rolls. that sounds like plenty :)

Sounds delish! My only thought is in regards to allergies (me: seafood, my darling nephew: nuts and more.) Thai sauce in my experience usually has shrimp paste or oyster or fish sauce in it. Oddly, when I go to Asian restaurants and tell them I'm allergic, they often don't think those ingredients count as seafood! I would recommend maybe having a second dipping sauce for the spring rolls like a sweet & sour (restaurant style clear is my fav) to over a vegetarian dipping option.also, while that happens to be one of my favorite salads, you might consider having the walnuts on the side so people with nut allergies can avoid it.

Thanks!! I will definitely bring that up with the caterer. I didnt even think about the whole nut thing. I will definitely bring the nuts and sauce up with the caterer and tell her that people will eat off the nemu. Thanks soo much for the input ladies!!
