My mom sent me this, so I thought I would share for those bakers given the upcoming Holiday season that seems to always call for lots of baking:

Ever wonder why our recipes that call for rolled oats include the note "do not use quick-cooking or instant oats"? That's because quick oats are often cut into small pieces, and instant oats are pre-cooked. Either way, they don't deliver the same nutty goodness and texture as old-fashioned rolled oats or steel-cut oats -- and they may end up as mush."
