too much? WR-Food

So my mom and the company she manages/works for also do catering on the side. The venue approved them, so we're going to be using my mom's work company as the caterers and my mom will manage every aspect of food, basically. She's really excited about this and pushed for it so I'm letting her.

FI's from Texas and I'm from NM so I was thinking of doing a duel buffet station and letting guests kind of pick what they want to have. The TX station will be brisket, mashed potatoes, mac -n- cheese, a roll and some bbq style beans. The NM station will have green enchiladas, rice, beans, tortiallas and fideo. Then I was thinking of two similar other tables on each side of the buffet with the same stuff (green salad, condiments, chips and salsa). 

Do you all think this is too much food? Or is it good options that are both kid and adult friendly? I was thinking if someone liked brisket but also wanted rice they could do that, they'd just stand in line twice or request a server to go to the other table real fast and serve them rice etc. 

Basically, is this too complicated? Should I only have one line or two tables w/same foods? 

I'd rather have mexican food, he'd rather have bbq texas style, this is what I was thinking...*Sigh*
