I bought the knots book of lists. It suggests you ask:
How long have you been a florist? How many weddings do you do a year/a weekend? What was the most unique arrange you've made? What styles do you have to chose from and can we alter them? What types of flowers do you like to work with? If its a large company, ask if the same florist you meet w/ will do your flowers. Do you offer rental items? Will you look at pictures we've found to help explain what we want? What do you thiknk would be appropriate for our style/wedding? What flowers will be in season/should we avoid for our wedding date? How big is the staff/how many people will work on our wedding? Where do you get your flowers? When will the arrangements be made? How will they be stored? Do you do delivery and set up? Do you preserve flowers after the wedding?
One question I asked that both florists said was a really good question no one really asked had asked them before: What arrangements do you make in case something happens to prevent you from doing the flowers. Examples; horrendous flu and they can't even stand up right. Do they have assistants, backup plan, etc.

I have to second KSTorkko, though, be sure to ask about whether they have back-up plans. At my MOH's wedding 5 years ago, the florist backed out 2 days before the wedding (I forget the details) and we scrambled to put together church decorations using flowers from costco. It turned out beautiful and nobody knew the difference (and my friend saved a lot of money), but it was some unnecessary stress right before the wedding.
