Put the rice and water in the pot at the same time, cover and bring it to a boil, then turn it down to simmer, stirring periodically to avoid boil-over and burnt bottoms. Your rice will be fabulous. Rice to water proportions:
regular long-grain or sticky sushi rice: 1 cup rice to 2 cups water
parboiled or basmati: 1 cup rice to a little over 2 cups water
brown rice: 1 cup rice to 2.25 cups water
