Mangoes are teh awesome.  Yes, I should've known this long ago.  I was always too intimidated by the cutting of them.  Yes, this is lame.  I admit that. NOW?  Love them.

I have "discovered" so many food loves this last year.  YAY FOR FOOD!

    mmm mangoes!  The kids love these too (at least mixed in their yogurt).  I do a caribbean jerk pulled pork sandwich with mango slices that is awesome too.
  • That sounds AWESOME, 6.  Please share.  I don't know if H would try with Mango, but I think I could sneak it in there.  ;)

    You'll get it if I can get the granola recipe you gave V :)

    This is a crockpot recipe and the beauty is the mango isn't in it so the husband should be ok:
    1.5-2 lb boneless pork shoulder
    1 T Jamaican jerk seasoning
    1/4 t dried tyme, crushed
    1 cup water
    1 T lime juice
    6-8 kaiser rolls
    6-8 lettuce leaves (optional)
    6 thinly sliced red or green sweet peppers (optional)
    1 medium mango peeled and thinly sliced (optional)
    1 recipe lime mayo

    -Put the first 4 items in a crockpot and cook 8-10 hrs on high or 4-5 on low. 
    -Remove the meat from the cooker and reserve juices.  Shred meat, skim fat from juices, add meat back in and stir in lime juice.
    - Serve on rolls with lettuce, peppers, mango and mayo

    Lime Mayo (this makes a ton so I have it)
    - In a bowl stir together 1/2 cup light mayo, 1/4 cup red onion, 1/4 t grated lime peel, 1 T lime juice, 1 clove minced garlic.

    I usually serve with sweet potato fries (they are good dipped in the mayo)

  • Mmmmm mangoes. The last one I bought, DH and I were sucking the skins ans pit to get the last little bit of fruit off. DS doesn't care for them- more for me! I made some Chipotle style chicken bowls and we threw chunks of mango in it and it was delish.
  • We had a mango tree in our yard but we chopped it down.

    DH was outside picking up the fallen leaves and mangoes. He threw it all away and then put his hands on his hips. He had a rash for over a month.
