Cooking question

We are having corn on the cob tonight and I have only ever grilled it outside.  It's kind of blah, rainy weather today, so I thought I'd boil it.

Do you add anything to the water?  I saw one person online that adds sugar to the water.

I was just planning to boil water and drop in the corn.

Re: Cooking question

  • I microwave it. Dampen a paper towel, roll up the ear and nuke for anywhere between 3 and 6 minutes or until the kernals are tender.
  • I've actually heard recently that you don't need to boil corn that long at all...rolling boil...dip sit and done.  BUT, I will have to find something to back that up.

    From NPR and Test Kitchens:

He also recommends boiling corn for no longer than a minute or two, if you're going to go the non-grilling route. "The corn we eat now bears almost no resemblance to the corn we ate a long time ago," he says. "Using an old recipe, it might say to cook it for 8 to 10 minutes, but that is way too long."

  • Hmmm.  Interesting, Oface.
  • I know! I remember listening to the broadcast and thinking..."holy crap, this is earthshattering, I must tell EVERYONE" and then immediately realized no one would believe me.

YES, corn cooking time is sacred.

  • I've never added anything to the water.

I also only boil it for like 3 minutes.  Basically enough to get it warm all the way through.  I'll have to experiment and see if a minute is enough.

although I never 1. thought of using cobs as stock and 2. never thought of using microwave to help get husks off.  Good article, Oface!

i add sugar and milk to the water if it is fresh corn. i also boil it for a while because i like when it softens up.
  • Ha!  I listened to that, too.  And I also told two or three people over the next week.  And then I pulled some frozen corn out of the freezer and put it into a salad without even cooking it.  It was liberating.

  • Corn in the bag I just run under some cold water to defrost.  I don't cook that.

I have sensitive teeth, so just straight from the frozen bag makes my teeth hurt even thinking about it.
  • To clarify, I wasn't chowing down on hunks of frozen corn.  I was making a marinated salad, so the frozen corn got dumped in with black beans, onions, and bell peppers, and a vinegar dressing concoction over night in the fridge before being consumed.

  • I'm confused about the sugar in the water.   Don't people know that corn is basically sugar itself?

i find that it tastes sweeter after adding about a tablespoon of sugar. the 4 times a year we have corn, this is how i make it. and then i load on the butter, so it's all sorts of healthful eats.

the milk in the water softens it up a little, too.

i never made frozen corn on the cob.
  • re: cobs as stock, that's up there w/ 'corn cob jelly' as things my grandma did I"m to lazy to handle.
  • You guys know I love canning and cooking from scratch and trying to reduce/reuse/recycle.

But sometimes, I just want to throw that crap away too.
