I took some at the Main Line Night School several years ago.  I thought it was intersting/fun. Plus they are cheap http://www.mainlineschoolnight.org/

I've heard good things about the Viking School.  Plus, you get to work with their beautiful appliances.

i really like the viking school classes - but they are alittle steep IMO - $90-$120/3 hour classes.

You could also attend Williams and Sonoma's Culinary Demos. I was at the store the other day and the list of classes was pretty killer. Bonus - they are usually free. The only bad thing is you may be tempted to buy some of their awesome stuff.

I took a sushi class at the Restaurant School. It was a little pricey, but a lot of fun and we took home a TON of sushi!
