I can't really follow your post...so I'll try to decipher...

So your Cocktail Hour is the Mac & Cheese Station & Sliders & the Mediterranian Station & Smores and this stuff?:
    domestic and imported cheese
    fresh seasonal fruit
    assorted bruschetta taperade
    grilled vegetables with crudite
    jerk chicken satay

If so then that's a nice variety.

Your dinner is the grilled chicken breast with rice pilaf & vegetables? I mean, that's OK, but it's kind of boring compared to your cocktail hour fare. You should probably have another option for guests for dinner...

You have plenty, have at least twice the amount of food I'm serving. Sounds very good.

I agree that your meal offering will be kind of a letdown after your fantastic cocktail hour.  If I knew what my entree was going to be, I'd make sure to fill up during cocktail hour so I wouldn't need to eat dinner.  I think you need to offer at least one other entree choice, and make the choices more interesting.  Or, scrap the plated meal and put that money into expanding the cocktail hour and just making that food the meal, so it lasts all night.

    tapenade.
but do you mean assorted bruschetta and tapenade? i'm not sure exactly what you mean. tapenade is an olive spread. bruschetta is the oiled toasted bread that you put something on (it's NOT the toppings for the bread).
