Cake all one flavor, or multiple flavors?

We're having a 3-tiered wedding cake. We were thinking about having each tier be a different flavor, but my caterer is against it. He's been in the business for many years and says 99% of the time wedding guests gravitate towards one of the flavors (usually chocolate), and then when the most popular flavor is gone, guests who didn't get it are a little annoyed.

Obviously this isn't that big of a deal either way, but I'm curious--anyone else doing multiple cake flavors? Just one flavor? What's your take?

  • We have a five layer cake, each layer is white cake with buttercream icing, but the fillings vary from layer to layer. The fillings definitely change the overall flavor of the cake, even if the cake itself is the same.

    I got one flavor because our baker charges extra for additional flavors, not to mention not all flavors are eaten at the same rate.  You may have leftover cake if people don't care for the flavor of a certain tier.
  • I agree with checking w the baker about price before going ahead with plans to make each teir a different flavor.  If it doesnt cost more though, I'd say do what you want.  The baker may have been in business for years, but that doesn't mean you have to change what you want.

  • We are doing 3 flavors of cupcakes. Red velvet (my favorite), carrot cake (FI's favorite) and traditional white for those who don't like those flavors. We figure with those 3 flavors, people should find a kind they like, hopefully.
  • We're having a 4 layer cake. We're just picking different fillings. We're doing 2 buttercream, 1 lemon and 1 raspberry. I feel like if you spend the money on it, it's really your choice as to what you want. I personally love cake fillings, my fiance however doesn't so that's why we chose to go that route. Kind of a compromise for the both of us. Oh and we're doing cookie cake for the grooms cake. If people can't find something they like, then too bad so sad.
  • We had a 4 tier cake with 3 different flavors.  Our guest liked having a choice.  Just make sure the most popular flavor is the biggest layer.

  • We had a 4 tier cake and served 3 of them.  Two were chocolate, one was white.  We did the white layer for those who might not like chocolate - namely, my grandmother.  At the end of the night we just had a little bit of chocolate left, so it was apparently fine.  I think the biggest thing is to make sure you have enough of flavors that most people will eat.  If you go with yellow cake with peanut butter filling, you might want to make that a smaller layer than your white with raspberry filled cake.
  • We have a four tier cake and we are doing two flavors.  The top and bottom tiers are chocolate cake with chocolate bacci (nutella!) and the middle tiers are vanilla cake with chocolate pudding.  We went with a traditional flavor and one of our favorite flavors-nutella!

  • I think I agree with your caterer. I remember being a kid and how my mother would buy neopolitan ice cream and my sister and I would always scoop out all of the chocolate. :)  I think that's kind of what he's getting at. I plan for my cake to be one flavor, but we're doing a buffet style reception so I'm also going to include some little assorted desserts in addition to the cake.
