Um can I come to your wedding, because pasta is my absolute favorite...any shape, any style, and with lots of cheese! LOL!
We only had one pasta dish at our wedding, penne with chicken, but as far as dos and don'ts...
do not have/use any type of string pasta (linguine, spaghetti, etc) These are incredibly messing with the whole slurping and strings flipping around and spraying people (and outfits) with sauce. I would stick with pastas that are easy to pick up with a fork (penne, rigtoni, bow tie, rotini, etc)
make sure to mix up the type of sauces...cream, red, meat, butter/olive oil
make sure some of the dishes do not contain cheese or have the cheese on the side because amazingly there are people out there who do not like cheese (crazy, I know LOL)
try to mix up the heaviness of the dishes...like have 2 heavy dishes (such as chickn parm or stuffed shells) with lighter dishes (such as sauteed veggies in a light butter sauce
That is all I can think of, but now I really want a bowl of pasta!
Penne, tortellini, farfalle (bow tie) would all be good! Easier to scoop out of the serving dishes than spaghetti or other long pastas. Have some different sauce options, meatballs/sausage, and cheeses. Maybe a lasagna?
We're thinking pasta bar for us too- probably with several pasta types, meatballs, sausage, grilled veggies, various sauces, some cheeses, salad, and garlic bread. Not sure about the baked pasta option- that's something to think about!
We are having a pasta station with bow tie pasta, rotini, tomato sauce, alfredo sauce, meatballs and grilled chicken. I had wondered why our venue didnt choose a string pasta but pp had a good point about it being messy.

A pasta buffet sounds delicious! Be sure to provide enough variety and include veggies/meats so it's not all carbs. As pps suggested, I'd provide a few options for different sauces. Penne vodka with grilled chicken is a good way to incorporate meat. Of course, meatballs would be a great idea too. I'd probably provide salad and or pasta with broccoli too!
Thanks so much ladies...this has really helped me out. I was going to have spag. but there were some great points made on how messy it could get. So far I was thinking,mostaccioli, reg. lasagna, veggie lasagna, chicken fettuccini, Italian meatballs, pasta salad,mac & cheese, reg. salad, garlic bread, reg. rolls and veggie trays. I like the idea of stuffed shells too so I may add that.

We don't have a pasta buffet, but we have a buffet with a pasta selection
For ours the caterer recommended stuffed shells as opposed to raviloi because the shapes are easier to determine and the shells are alot less messy.
The eggplant parmigiano as opposed to the baked ziti because of the meat (we have alot of vegetarians attending)
If you have elbow pasta salad, try to avoid another elbow pasta dish; they're enough pastas to go around.
