Hi ladies! Sorry I havent been around much, or posted picks of my checks. So, busy...and so unmotivate lately.

Hopefully this weekend I'll catch up with all of you.
I made a meatloaf last night, and FI said it was better then the usual meatloaf. And I make an awesome meatloaf! I thought I'd share this healthier version while the weather is still comfort food friendly.
1lb ground turkey
1 yellow onion
worcheshire sauce
2tbsp low cal BBQ sauce (we've found KC masterpiece to be the lowest)
1/4c egg beaters
1c fiber one cereal "breadcrumbs"
1/4c FF chicken broth
salt
pepper
PAM
Simply Heinz Ketchup
Oven set to 325*
1. dice the onion, place into a skillet with PAM spray, salt & pepper to taste, cooking the onions translucent, but not brown
2. add the chicken broth, bring to boil
3. remove from heat, add BBQ sauce and worcheshire. I use like 7 shakes. Mix well. Let stand to room temp.
4. In a bowl, mix turkey, egg beater, breadcrumbs and onion mixture.
5. form into a loaf shape, and place in loaf pan or on baking sheet
6. squirt some ketchup over the top. i just do a little squiggle pattern
7. place in oven, cook for approx 45min or until internal temp is 160*
we served with lots of veggies, and got 4 servings out of it. The turkey package reads 4 servings per package, 170 cal per serving. There are a lot of added ingredients, but small amounts and spread throughout. Not to mention the added fiber from the cereal. I guesstimated it to be around 250-300 cal. Feel free to add it up and figure it out for a more accurate count.
