I literally just made the most awesome buffalo chicken sandwich.
boneless skinless chicken breast, about 3oz. pounded flat.
sandwich thin
red onion
romaine lettuce
blue cheese dressing ( i like maries yogurt dressing)
PAM spray
light butter (like bummel & Brown or LOL whipped light)
franks red hot
salt
pepper
chili powder
heat a grill pan, spray with PAM
season chicken breast with salt, pepper & chili powder
grill the chicken, both sides
while the chicken is cooking, melt 1tbsp butter in microwave, like 10sec. when melted stir in 2tbsp franks red hot. set aside
slice red onion, grill in pan
wash a leaf of lettuce
toast bun, if you like it toasted.
when chicken is finished, brush with hot sauce, both sides. BRUSH, dont dip (keeps cals lower this way!)
build sandwich on bun, pour on some bleu cheese, and VIOLA! buffalo chicken sandwich!

PS....spicy foods help ya lose weight faster. maybe ill start adding habeneros to my cheerios. LOL
