  • I'll take anything at this point.  Here's my mom's beef stew recipe.  It is so simple and delicious!  I always double it to have leftovers.

    Beef Stew

    ·       1 tbsp. all-purpose flour

    ·       ¾ tsp. salt

    ·       Dash pepper

    ·       ¾ lb. beef chuck, cut in 1-inch cubes

    ·       1 tbsp. shortening

    ·       10 ½ oz. condensed tomato soup

    ·       1 ¼ cups water (1 soup can)

    ·       ¾ cup chopped onion

    ·       ¼ tsp. dried basil

    ·       2 medium potatoes, cubed

    ·       2 medium carrots, cut in 1-inch pieces

    ·       ¼ cup dry red wine or water

     

    1.     Combine flour, salt, and pepper in plastic bag.  Coat meat cubes in seasoned flour.

    2.     Brown meat in hot shortening on stove top

    3.     Put in sauce pot with soup, water, onion, and basil

    4.     Cover and bake at 375O for 1 hour, or simmer on stove top for 1 hour at medium heat

    5.     Add potatoes, carrots and wine.

    6.     Cover and back for 1 hour, or simmer on stove top for 1 hour, or until potatoes are fork tender.

    7.     Makes 2 servings, double all ingredients but not times to make 4 servings.

    If anyone has any healthy but yummy vegetarian (or could include fish) recipes, please share! I need to cook for a non-meat eater next week and want to do something interesting for her.

  • We had some friends over for dinner a few weeks ago and she brought asparagas. 

    She sauteed it with some olive oil and seasoning then in a seperate pan, put 3/4 cup of balsamic vinegar with chopped shallots. 

    Boil the balsamic vinegar until it reduces and becomes slightly viscous and then use it as a sauce for the asparagas.  Soooooo tasty. I have made it every week since.

    You're welcome!  Instead of shallots, onions work too.  I have been really cheap lately and just bought an onion to slice throughout the week.

    Unfortunately, FI hates the smell of vinegar so I have to make it when he goes out and air out the kitchen before he comes back, lol.
  • here is one of my favorite vegetarian recipes!! this is my future mother in law's recipe. this is the perfect appetizer to serve to vegetarians or makes a great casual lunch: 
    vegetarian sausage rolls 
    -3 medium onions chopped
    -Gimme Lean ground fake sausage 14oz log (but only use 2/3 package) OR 4 veggie burgers broken into pieces
    -2 tbsp tomato paste
    -1 tbsp fresh sage (or 1/2 for dried)
    -1 tbsp basil
    -salt and pepper to taste
    -Puff pastry

     Soften 3 medium onions (chopped) in frying pan. Add 4 veggie burgers (broken into pieces) and cook for a further 3-4 min. Put the
     onion/burger into a bowl and add 2 tablespoons tomato puree, 1 tblspoon each freshly chopped sage and
    basil, salt and pepper to taste. Mix thoroughly and allow to cool.

    Roll puff pastry into 15x12 rectangle and cut into 3 strips, each 5
    inches wide. put 1/3 filling along center of each strip, leaving 1 in
    on both sides. brush top border w/ water, fold over. Make 3 cuts,
    brush w/ beaten milk, and bake at 400F for 25 min.

    **the explanation about the cutting isn't great.  basically, you put the filling in three long strips of puff pastry, roll and seal the pastry around the filling so it creates a tube of sorts, then cut the roll into pieces the size of your liking.  it comes out as delicious bite sized pastry puffs of goodness stuffed with fake meat :) 
  • Ooh that sounds good, too, Butterflyjumper. I wonder if I can make them ahead of time and then bake them when she comes over? I'm all about doing the hard stuff Sunday afternoons to save time during the week.

    These came out really good-- FI loved them too even though they were "skinny".  I used one cup all purpose flour and one cup of regular whole wheat flour.

    I think Meagan said she made the Skinny Italian Turkey Meatball recipe recently and loved it.
  • i was hoping to try the skinny turkey meatball recipe that meagan mentioned earlier as well!!

    and yes bmore!! fiance's mother usually makes them the day before, bakes them, stores them in tupperware, and then reheats in the oven to get them crisp again right before she wants to serve them. i did this myself for a christmas party and they came out perfectly!
  • Here's my incredibly unhealthy but insanely easy wings I'm making for the Giants game this weekend:

    4-5 lbs frozen chicken wings
    1 cup low-sodium soy sauce
    1 cup brown sugar
    garlic powder

    Preheat oven to 350

    Put wings in large oven-safe dish.
    Dissolve brown sugar in soy sauce. 
    Sprinkle garlic powder over wings.... pour soy sauce mixture over wings.
    Cover with foil, stick in oven.
    Bake for about 45 mins - 1 hour... stir... recover... put back in oven.
    Repeat until they're super tender but not falling off the bone... about 2 hours.

    The boys devour these pups.
