Deciding on a menu

Hey everyone.  I'm up in the air about a menu.  I know a caterer but we just can't afford 18+ a head.  I was wondering what everyone thought about having some pretty good men cooking the food (they've had experience cooking for large crowds).  I'm up in the air about a plated menu

grilled chicken breats, salad, baked potato, green beans, a roll, and I was wondering about one more side item that would go good with everything.  I'm just trying to cut costs.  My budget was around $5000 for the whole wedding and I'm kinda cutting it close.

Any ideas?

I have the linens, gifts (guests and parents), DJ, and venue already booked and purchased!  Thanks for your help
