Help- Breakfast menu for wedding

A little background our wedding has a guest list of 320 assuming 250 will come (w/40 kids who will be in a separate room)

1)  pork and seafood are not options for religious reasons and maybe 50% dont eat any type of meat  ,  some will not eat any food prepared in a kitchen that has prepared pork so I just nixed those products all together.all turkey products put us over our per guest $

2) we want breakfast heavy food because it offers more options at a cheaper price

3) we cut out the omlette stations because between chefs for all stations it cost

way too much

Our menu so far:

Hors D.:
- mini quiche
- strawberries piped with creamcheese
-pastelitos w/guava n cheese

Brunch:
Fresh fruit
crossaints
stuffed french toast
egg fritatas
breakfast potatoes
House salad
pasta selection

Alcohol-
Mimosas
Bloody Marys
Poinsettas
Moonshine ( non -alcoholic)
Mint Juleps
(1920's Harlem renaissance theme)

OR

we nix the lunch options and have omlette stations

Is it reasonable to offer kids : ceral, waffles, eggs only?

What would you change?

IDK. Thats a tough one. I think I would nix the pasta and salad since it's the only lunch menu on there and add some more breakfast food. What about getting rid of an alcohol and putting that money toward the food? I dont know what those drinks have in them, but if it's different than vodka I would stick with just vodka drinks and mimosas so you can use that extra money somewhere else.

Maybe have an egg station then people can make egg sandwiches with the croissant.
Also you can add screwdrivers to your drink list.
