Eco-friendly/Organic catering

I'm trying to do a budget yet eco-friendly wedding. I would love to use a caterer that uses local foods and/or organic foods and is vegan friendly. I'm vegan and 3 other guests are vegan. Other than that, all other guests eat meat. Any suggestions?

This is going to be only kinda helpful, but my DJ was Zach Dauphinais and in one of our conversations, I remember him telling me about a friend of his who is a vegan chef/baker and does all kinds of organic/vegan cakes, but unfortunately I can't remember her name.  If you drop him a line, I bet he can point you in the right direction.

Not sure how budget you want to go but Whole Foods and Edge of the Woods (in New Haven) does catering. It will probably work best for a casual buffet type reception.

I think River Tavern in Chester tries to use local foods as much as possible.
