Calling all of you for your input on Mexico!!!

I think based on our budget, we are leaning towards Mexico, although the Carribean is not completely out - I think from what I have read so far, we can still get what we want in Mexico. We want the tropic feel, but my love is very active - he would not be happy lying on the beach or poolside for a week. We want to go somewhere we can zip-line, hike, horseback, etc - any of those things in addition to having some downtime. I have read posts on numerous places, but it would really be helpful to hear your opinions of places you have been and what types of activites there were. Let me know in the ballpark what I should be prepared to spend (we would like to keep it under 3K).

I should add if its all-inclusive, it would be even better!!!!

We stayed at the Moon Palace in Cancun this past October.  For 5 nights (including airfare), it was about $2500.  It is an all inclusive.  We did a Hummer Jungle Tour that was about $125 each, which was an all-day excursion.  That was pretty cool as well.  You could easily keep it under $3k.  There are other all inclusives that are cheaper along the hotel zone, but I don't feel that it offered what the Palace Resorts offered.  We could visit all the palace resorts (there's 4 of them) in Cancun.  So, with that being said, we did not have to eat at the same place more than once. Exception was breakfast.  There's 2 locations at Moon Palace that serves breakfast.

I just checked out the Moon Palace in Cancun and it looks fabulous!

Palace resorts are nice. I stayed at the Sun Palace for my honeymoon and loved it. The beach was unbelievable and the rooms spacious and beautiful. Great service. I would go back in a heart beat!
