Has anyone used them and where did you go, where did you stay, and can you reccommend?

We used them to go to Cancun in 2007.  We stayed at the Riu Palace and had no problems.

We've used them for 2 different trips to Riveria Maya.  The first was for Iberostar and 2nd was our HM at Secrets Maroma.  I'd defintiely recommend them

we booked ours through apple as well - saved us a TON of money. we actually booked ours directly through our resort, but the package was put together electronically by apple. not sure how this worked exactly, but it got us a great deal (basically, adding our flight on top of our room price added $200 instead of paying $1000 for our flights separately which is what they would have been had we booked hotel separate from flight)
