All-inclusive Caribbean

I am thinking of planning a 1-year anniversary trip and would like to hear any suggestions on all-inclusive resorts in the Caribbean, such as on the Riviera Maya, DR, etc.  We are looking for a relaxed place geared towards couples that offers many resturants on the resort, as we would be happy to never have to leave during our stay.  We would want to stay about a week and I would love to keep it around 2,300 including airfare if possible!  We stayed at the Valentin Imperial Maya for our honeymoon, which we absolutely loved.

    we're staying at the Windjammer in St Lucia. You have the option of going Ai or pay as you go. If you pay as you go, they give you "sun dollars" credit so you can use towards meals or spa treatments or excursions outside the resort. 

    Included in the room price though is free sailing, and other water activities on the grounds. 

    Rooms per night are approx $250-450 per night, depending what season you go and if you want a villa (with or without ur own private plunge pool) or just a suite. 

    It also has large 3 bedroom villas on the property, so chances are there are also families with kids there. But I think its still very much well worth going there. 

    The resort is build along a mountain side which sets it apart from other type resort/hotels. I imagine the views are spectacular - all views are ocean front. 

    The resort has 5 restaurants on the property and one bar on the beach where they bring your drinks to you on the beach. Tripadvisor reviews give the restauarnts very good reviews. 

    If you're flying from the east coast, you have a much better chance of getting cheaper airfare. Jetblue flys from JFK straight to St Lucia for $400/per person.
