Food & Clean-up

We are having an outdoor buffet... we are using real plates and flatware... however when people are done with their meal, where do the dishes go? Do I set up a return station, similar to IKEA?

I would do that, or if you have people serving the food maybe have them come pick them up and put them into tubs that can be cleaned later.
