Congratulations!!!  If you are staying in Old Town/downtown Scottsdale, you are in the right place for night life stuff.  There are tons and tons of clubs and restaurants down there.  As far as touristy stuff, if you have the time and a rental car, now is a great time to drive up to Sedona and view the changing leaves.  You could also drive up to the Grand Canyon.  Locally, you could visit some of the museums, the Phoenix Art Museum, the Heard Museum. You could visit all of the great malls, Scottsdale Fashion Square, Kierland, shop in old town, etc.

Welcome to AZ! If you're athletic or you enjoy outdoor activities you might try hiking Camelback Mountain during the day. The Cholla trail is a lot of fun & it gives you 360 degree views of the valley, which are breathtaking. If you're looking for a great place to go out for dinner/drinks you could any of the following (I'll suggest a mix of places):1) The Sanctuary Resort: having lunch or dinner/cocktails around sunset will give you beauitful views of Mummy Mountain in Paradise Valley, this a relaxing/mellow & romantic place 1) Saddle Ranch Chop House: modern cowboy feel, casual atmosphere & a great place for people watching day or night, mechanical bull, great food/drinks 2) AZ 88: great food, swanky atmosphere, great martinis, place to see & be seen, hop over to the Mondrian across the way for drinks 3) Wildfish at the Scottsdale Waterfront: fantastic happy hour with amazingly fresh seafood, I think the all-night happy hour is still going on this month4) Blanco at the Borgata: fantastic Mexican food & probably the most extensive tequila menu you've ever seen, you'll totally feel like you're in the Southwest after eating/drinking hereI hope you have a fabulous trip!
