Salutations! New around here

Hey everyone, I just wanted to say hi and introduce myself. I've been lurking on here for a little while, and have already learned quite a bit from all of you. So, thank you! I really don't know what I would do without this community.

We're getting married in April 2012 and have already chosen a wedding coordinator, venue, and caterer... it seems like we're doing pretty well so far! I live in Dallas and the wedding will be in Phoenix, so we're trying to plan things as far in advance as possible. I would love to hear people's tips about planning a wedding in another city.

    Sorry for taking so long to get back to you!

    We decided to have both the ceremony and reception outside in my FI's parents' gated community. It has a huge open park with lots of trees that's absolutely perfect for a spring wedding :)

    We're also using Jennifer's Catering in Phoenix. We chose them because, in addition to having a great proposed menu, they're experienced at cooking for people with dietary issues. We have lots of Celiac Disease, gluten-sensitivity, lactose-intolerance, etc. in both of our families, so that was very important to us.

    I don't have much advice for out of town planning, but I did want to mention that the company I used for our wedding cake was very good about our cake needs.  My mom has CD, and lactose sensitivities, and they made her a cake that she said was the BEST she had ever tasted, and she had no issues at all after eating it, so we know they did it all right.  She still talks about it, almost 6 months later.  =)

    If the cake isn't included in your catering, you should check into them for yours!

    Thank you for the suggestion, Syndelin. I'm extremely glad to see that more conventional bakeries are offering gluten-free and other specialized options for people. Plus, they seem to be taking the issue of cross-contamination very seriously.

    We're actually ordering the cake from Angela Saban of Angel Cakes Bakery: http://www.etsy.com/shop/angelcakesbakery. We really need something baked in a 100% dedicated gluten free kitchen, and Angela does this. We've had some of her cupcakes, and they were delicious.

    Angela Saban is also our wedding planner, and she's been amazing so far!

    Dedicated kitchen is an awesome bonus for sure!  I'm glad you found a good option for you!  Her cakes would have been way out of our budget though... we got two cakes, one GF and one regular (around 125 servings total) from PoC for less than half her lowest wedding cake design.  Yikes.

    Oh, her cakes aren't cheap, for sure. The ones shown on her Etsy site are more expensive, however, because they have special fillings and elaborate decorations. We'll probably go with something a little simpler. We're just plain vanilla 'n chocolate people :)

    Yeah, they're pretty...  but my cake wasn't exactly simple either.  It was a tier cake, but upside-down.  LOL

    It was still half her lowest one in her store....  that's crazy prices, imo.
