Hi Kimmy, i need a simple yet good mai tai recipe...as you are the queen of everything tiki you were the obvious choice. TIA! J. :-)

    Good call to ask me! :) This is the original Mai Tai recipe.  All others are not really Mai Tais. 

    1 oz fresh lime juice (Really, it must be fresh and not out of a bottle. Makes a huge difference in taste.)
    1/2 oz orange Curacao
    1/4 oz oregeat syrup (In case you don't know, this is almond and you can get it easy.)
    1 oz aged Jamaican rum (You do not want to use Myer's for this.  Even though ppl think Myer's is a dark rum, it's really a light rum that has brown food coloring added to it. Some good options are 17 yr Wray Nephew Jamaican Rum and Coruba are both good ones to use here.)
    1 oz aged Martinique rum (This is an amber rum. For some reason, this rum can be hard to find sometimes.  If you can't find a Martinique room then sub with a Haitian rum.)

    Shake well with plenty of crushed ice. Pour unstrained into a double old-fashion glass. Sink your used lime shells into the drink and garnish with a mint sprig.

    If anyone else needs tiki or tropical drink recipes, I have them all! My FI and I even created our own signiture wedding drink.

    Quick question...when you say fresh lime juice do you mean the bartender takes a lime and squeezes the juice right there??? How many limes do you think are required for one drink? What do you mean by this...Sink your used lime shells into the drink?

    Any recipes for a lilikoi mjito?

    LYCHEE MARTINI
    vodka and lychee juice(3 ounces premium vodka and 1 ounce lychee juice)

    BLUE HAWAIIAN
    rum, blue curacao, cream of coconut and pineapple juice
    (1 ounce light rum, 1 ounce blue curacao, 1 ounce cream of coconut and 2 ounces pineapple juice)

    Yes, have the bartender squeeze fresh limes.  Have him roll each one before cutting into it to get the most juice. There's a little lime squeezer that you can get for under $10 that's lime green that makes squeezing them really fast. For a little tip to make it go faster, you can squeeze the limes in advance a couple hours.  But, not the night before.  The lime juice starts going bad and the flavor changes quickly. 

    How much juice you get from a lime depends on the lime.  How ripe it is and the size.  1 oz is 2 tbls to help you out. 

    Sink your lime shell means to push it down into the drink.

    Lilikoi Mojito
    Mint
    Lime
    1.5 oz 10 Cane Rum
    1 oz Lilkoi puree
    Home made sweet and sour mix
    Soda water

    In a hurricane squall glass,  muddle fresh mint and lime. Fill with ice and add 1.5oz 10 cane rum and 1oz of lilikoi puree.  Add 1 oz sweet and sour mix. Mix all ingredients in the glass and top with soda water. Garnish with a lime wheel and orchid flower. If you like it more sweet, add .5 oz of simple syrup.

    To make you own sweet and sour mix  for this drink mix together equal parts of agave nectar and lime juice. 
     
    I'd try putting in a half oz of lycee liquor into your martini for half an oz of the vodka.  So, 2.5 oz vodka, .5 lychee liquor and 1 oz lychee juice.  

    So the original Blue Hawaii recipe doen't actually have coconut in it.  Shocker, I know! Here is it just in case you want it:

    3 oz fresh pineapple juice 
    1 oz sweet n sour mix
    1/2 oz blue curacao
    3/4 oz white Puerto Rican rum
    3/4 oz vodka

    Shake all well with plenty of ice and pour into a tall glass.

    I like the coconut in my Blue Hawaii, so I add 1 oz of coconut syrup.  Blends better than the cream of coconut. 

    To make your sweet n sour mix for the recipe combine two parts fresh lemon juice to simple syrup. 

    To make your own simple syrup for both recipes, mix one part raw sugar with one part water in a sauce pan over simmer, stirring constantly until completely dissolved.
