Buffet Reception- how much food!

Hi! For those who chose a buffet dinner at your reception, how did you decide how much food to order? We are having grilled chicken salad, garden salad, rolls, pasta in red sauce, tort. in alfredo, and an italian chicken dish. My question is: Do we order enough of EACH dish for EACH person? Even though some may have pasta and salad and not the other? With different options, do we still need enough of each item for feed our guest count?  Any experience or ideas would be greatly appreciated!!!

    Cali from A Sound Impression is great! I'm not sure on them traveling to Omaha though. They have unlimited hours and are very professional. They don't try and take the show or anything. Not sure if you have a facebook page or just google the website. Hope that's of some help!

    We are using Dave at Bandstand next weekend! He did another wedding I was at and he did great :)

    Who are you ordering your food from?  Have you asked them?

    If it were me, I'd planfor each person to eat each dish.  I'd rather have extra than run out.
